Become a Butcher! The next Rock Stars of the culinary world.

Chicago has always been a meat town and we have some of the finest meat cutters in the world here. There are still active apprentice programs and many young chefs fresh out of school seem to be the most interested in the profession. We offer Red Market Butcher Classes monthly where you can listen, watch, participate and learn from one of Chicago’s Master Butchers. This makes us different then most “Butcher demonstrations” as we want you immersed in the experience.  We want you holding knives and wielding cleavers and learning cutting techniques. We want you to have “hands-on” experience!

We also have the provider on hand to talk about how the animal was raised. Then we have a Chef prepare the cuts and they you cut and have fun with others as they explore the fascinating world of Butchery. Most of the participates are eager to see a carcass up close and learn about primal cuts and muscle groups. You’ll learn from the best Butchery and Culinary talents Chicago has to offer.  You are participating first-hand in the renaissance of the local Butcher.

Who else is the authority in the local meat system? Who really connects the local provider with the table? Who is the final custodian of the meat system? - The Butcher.

The local Butcher is becoming a critical element to the local meat system. As you learn more about the meat you eat and the cuts you like, you’ll be able to become somewhat of an authority yourself the next time you pick up meat from your local butcher.

The Butchers are sometimes three times the age of some of the attendees which is all the better and all the more wisdom.  Meat does not come in a neatly designed single cut containers in a grocer.  The animal on the table connects you with the Butcher in both heart and mind. You’ll see the whole animal and honor the sacrifice it made so we can eat.  You will find a new passion for our local meat system and the people who work in it every day.
